Harvesting season is one of the most cherished time of the year for us olive producers. When this time of the year comes we start our laborious task of hand picking our olives. There are two seperate harvest seasons for Palamidas. One is called the Early Harvest, when selected gardens are hand picked for our Early Harvest Premium Quality Extra Virgin Olive Oil products. During this time olives are gathered only by hand to minimize any harm done to the fruit and to ensure the quality of the end product. The Early Harvest starts in the late days of September when the olives are still bright green and ends in mid October. The second harvest season starts in mid October and continues until the early days of January. This is when the majority of the gardens are picked. Olives that are obtained during this period are still high quality, the only difference is that olives are ripe to be pressed as well as ready to be consumed as table olives.

We ensure that only the highest quality olives are harvested

The quality of the oil depends on the quality of the raw material (the olives) that goes into production. While a lot of our competitors try and cut corners with poor-quality olives, our focus begins right at the harvesting stage, and we ensure that only the best olives go into the production of our oils. We also separate the olives depending on their quality and ensure that the storage of the olives is done scientifically to prevent spoilage.
A secret that a lot of oil producers will not tell you is that the olives need to be transported within a day of harvest to the mill to prevent spoilage and maintain the quality. This helps in producing larger quantities at great quality and also provides a competitive price for our products.

Our equipment is efficient and clean

Once our olives find their way to the mill, they are inspected for quality and then prepped to be crushed. We take steps to ensure that the olives do not ferment or oxidise, which often has a very bad effect on the end taste. After prepping the olives, they are now ready to be crushed. Our equipment is constantly cleaned and maintained to ensure that the entire preparation process remains hygienic. We also impose temperature controls to ensure that the olives remain fresh and the water that we use in our production process is clean. An olive oil producer needs to keep the temperature uniform across the entire production and extraction process.
Once the olives are crushed, they are finally ready to be pressed to extract the oil. We carry out the separation of the solids from the oil with the most modern equipment and have a low-waste policy, to ensure that the best oil reaches you, but also keep in mind the importance of limiting wastage due to environmental concerns. Our two-phase centrifugation system makes our olive oil superior to most other brands you would find in the market today.

What a lot of people do not realise is that storing the olive oil at the right temperature and in the right manner is as important in determining its quality, as is the production process. We attempt to reduce the number of air pockets in our oil, and we separate the end oil based on their quality.
Our team also constantly samples the product to evaluate the quality of the oil and classify each batch painstakingly. We keep in mind aspects such as quantum of acidity, organoleptic characteristics, colour and density, amongst many others.

Extra Virgin Olive Oil

Palamidas Extra Virgin Olive Oil” is our standard olive oil. Just like Cold-Pressed,olives are picked by hand from our own olive gardens and processed with extra care. Our extra Virgin Olive Oil is pressed in ideal temperatures to produce a golden green oil that can retain its olive flavor.Very specific standards have to be met for an olive oil to receive the label Extra Virgin. This type of oil is best used in salad dressings, seasonings and raw consumption but can be also used in cooking

Pure Olive Oil

Pure olive oil is a blend of extra virgin olive oil and processed oils. Light oils are often processed and refined, which strips down the color as well as the flavor. Processing makes the oil last longer, and it also makes it possible to heat the oil to a higher temperature, which is good for cooking.

Virgin Olive Oil
